Blood orange anthocyanins (primarily cyanidin-3-glucoside, the same pigment in red cabbage and cherries) are synthesized only in cool night temperatures during ripening — blood oranges grown in warm, uniform climates (Florida, some California locations) may have little or no red color. The distinctive flavor combines standard orange aromatics (limonene from the peel) with the berry/raspberry character that the anthocyanin-producing conditions also promote through parallel flavor compound development. Moro (the darkest, most intensely colored variety) has the strongest berry note; Tarocco (from Sicily, considered the finest flavor) balances sweetness, orange aromatics, and a gentle berry nuance. The color of blood orange juice makes it visually extraordinary in cocktails (the Aperol Spritz variant with blood orange juice), in sauces (blood orange gastrique for duck), in curd and panna cotta, and in winter salads with fennel, olives, and red onion.
